Kanazawa University (Kanazawa City, Ishikawa Prefecture) has launched an exclusive sake "KOKOROZASHI" developed with students in collaboration with NOGUCHI NAOHIKO SAKE INSTITUTE Inc. (Komatsu City, Ishikawa Prefecture).
The institute was established in November 2009 to pass on to the next generation the sake brewing techniques and spirit of Naohiko Noguchi, the "God of Sake Making". As a research university with an emphasis on education, Kanazawa University, which aims to contribute to society through Future-oriented Intelligence, has been collaborating with the institute since January 2024 to develop exclusive sake, mainly through student project members. This sake, which was first brewed at the end of January 2025, is the first sake of its kind brewed by the institute.
Starting June 11, orders are being accepted at Kanazawa University cooperative.
